From The Chef
This menu is very personal to me. It is shaped by a life of moving, traveling, cooking and gathering food memories along the way. Each dish comes from somewhere: a food I grew up with, something I’ve cooked for people I love, or a meal I experienced and never quite forgot. That spirit of wandering is also where Matilda gets her name. Waltzing Matilda is an old Australian folk song, and the expression came to mean wandering or traveling on foot. I loved the idea of a name rooted in curiosity, movement and adventure. It feels very connected to my own journey. Some of these dishes may feel familiar, while others might be a new way to begin the day, but to me, they all belong at the same table. Everything is made with intention, care and a genuine love of feeding people.
I hope something you eat here becomes a food memory of your own.
